Raja has perfected his noodle-making skill, he's such a pro at it now.
Just found out that the ingredients for yellow noodles (Singapore Noodles or Hokkien Noodles, as it is called in Australia) contains the following: Wheat Flour, Water, Salt, Sodium Bicarbarbonate, Permitted Colouring.
However, for our hand-made noodles, we use: 2 1/4 cups flour, 3 eggs, 2 teaspoon of olive oil. I reckon this is a much healthier option, besides what can be better than hand-made noodles.
Al and I have a friend, Ning Ji, in Beijing that does noodle-stretching, I wonder if I could get a picture from him to put on my blog. That's as much an art as a skill, I think.
